Stress from the holidays left me with uncreativity – so presto! Here is a recipe.

Teatime muffins

You will need:

  • 1 1/3 cups of all-purpose flour
  • 3/4 cup of rolled oats
  • 2 teaspoons of baking powder
  • 1/2 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 1 beaten egg
  • 3/4 cup of milk
  • 1/2 cup packed brown suger
  • 1/4 cup cooking oil
  • 1/2 teaspoon vanilla3/4 cup of fresh or frozen blueberries

Grease 18 1 3/4-inch or six 2 1/2-inch muffin cups or line then with paper bake cups; set aside. In a bowl stir together the flower, oats, baking powder, baking soda, and salt. Make a well in the center of the dry mixture.

In a bowl combine the egg, milk, brown suger, oil, and vanilla. Add egg mixture all at once to the dry mixture. Stir just until it is moistened (batter should be lumpy). Fold blueberries into the banner.

Spoon half of the batter into the prepared muffin cups, filling each 3/4 full. Bake in a 400 degrees oven for 10 to 12 minutes for 1 3/4 muffins or 16 to 18 minutes for 2 1/2-iinch muffins or until done. Cool in muffin cups on a wire rack 5 minutes; remove muffins from cups. Repeat with remaining batter. Serve warm. Makes 36 muffins.

Note: To use raisens or figs instead of blueberries, substiture 1/2 cup snipped dried figs or raisens. Add 1/2 cup chopped pecans.
